The experience of going out to eat is one of the oldest forms of entertainment, and some of my greatest times have been with family and friends gathered around a table eating and drinking. I knew at a young age that cooking is a noble profession, and something I wanted to do the rest of my life. I've never regretted that decision, and after seven years in the restaurant industry I'm proud to be a part of the Smokehouse Brewpub.
To me, cooking is about taking fresh ingredients and preparing them perfectly.  I'm a believer of buying local when possible, and buying local goods will be an integral part of the kitchen. I want to explore the unique culture that is Minnesota to develop recipes, and I want our smoked meats to reflect what this state has to offer.  Food made simply with care and precision always shines through, and food/beer pairings will be created to complement each other.
"That's the best thing I've ever eaten!" is the highest compliment I've ever been given. My goal in the kitchen will always be to make the best dish you've ever eaten. My goal for the restaurant is a bit loftier. To create not only a great meal, but to help create a wonderful experience.
